I absolutely LOVE pumpkin… seriously if anything has pumpkin (or squash or sweet potato) it’s like my mouth immediately starts to salivate. And since it’s that time of year there’s an abundance of pumpkin flavored everything and I love it!

With this recipe I would normally use a 9×13 pan and cut them into squares but I recently bought a doughnut pan and decided I wanted to break it in. The recipe came out absolutely amazing and the doughnut came out nice and moist. I added walnuts to the batter, it gave it a nice crunch… this with the extra nuttiness of the pecan butter and the sweet/tartness of the dried cranberries it was like I had a little bit of heaven in my mouth!

doughnut Ingredients
  2 cup oat flour
  4 egg whites
  ½ cup Xylitol brown sugar blend (or Stevia/Splenda)
  1 15oz can of raw pumpkin puree
  1 4oz container of applesauce
  ½ cup unsweetened almond milk
  2 tsp ground cinnamon
  1½ tsp ground ginger
  ½ tsp ground clove
  2 tsp vanilla extract
  1 tsp baking powder
  1 tsp baking soda
  ½ tsp salt
  4 scoops vanilla protein powder (optional)
  ½ cup chopped walnuts (optional)

glaze ingredients
raw pecan butter
dried cranberries

1. Preheat the oven at 350°.
2. Combine all dry ingredients and mix.
3. Add all wet ingredients to dry mixture and mix. If adding walnuts mix until it has been fully incorporated into the batter.
4. Spray a 9×13 glass dish with non stick spray (or use a doughnut pan!) and bake for 30 mins.
5. Makes 24 squares or about 12 doughnuts. If making doughnuts, let them cool and add pecan butter and decorate with dried cranberries!

do I look halloween enough?
Meet the best friend Kenne. She holds the crown for my longest lasting friendship, going on 14+ years. She’s incredibly smart, funny and a little bit crazy… just how I like ‘em. This picture was taken right before she was going to go out into the city. I’m in the kitchen making my doughnuts, she struts in and leans over the breakfast bar, pops her hips to the side and says “do I look halloween enough?”. I look over, she’s all dolled up with knee-high leather boots, black leather pants and a chiffon orange top… “you look fabulous!” {and of course this is followed by…} “I wanna take a picture!!” She grabs the little pumpkin I had on the breakfast bar (I have like 5 of them around the house to go with my fall decor) to further accentuate her “halloween” theme and I snap this picture…. too. freaking. cute. Coincidently enough and unknown to her it gave me the perfect way to end this post.
