chop, chop, chop
After learning some very simple chopping techniques from the BCAE cooking class I took last month I’ve really enjoyed doing it. It’s super easy and fun once you figure out the rhythm. This particular recipe is super easy and it’s really just a matter of chopping up some veggies and mixing them up. I was inspired to make this after seeing an instagram post from Fit Fun and Fantastic (I couldn’t find her recipe on the blog but it’s on her instagram), this one has all the basic ingredients she used with a few modification to the seasoning. I had this with turkey that I had cooking in the crockpot… it was perfect!
Wait, so what’s the recipe? black bean, corn, and tomato salad! you get some tastearoo points if you guessed correctly… here’s the recipe.
1 can of black beans
1 can of corn
½ of medium-sized purple onion
1 cup of chopped tomatoes
1 lime, juiced
⅔ tsp minced garlic
½ tsp salt
chopped fresh cilantro
1. Chop the tomatoes (I used red and yellow cherry tomatoes) and onion.
2. Drain and rinse the can of corn and black beans. The black beans I used here was about half a package of raw beans that I had left over from another recipe, doing it this way takes more time but I can explain what you need to do if you’ll like but using the canned ones works just as well.
3. Mix all ingredients together and allow it to sit so that it soaks in all the flavors.
One thing you should know about me is that I’m not a big fan of onions but I’ve slowly started to incorporate it into different foods. I can’t even fully articulate when I think I’ll like it or not… so I guess you can say it’s “complicated”. I know I like the onion flavor; I have both, ground onion and dried-freeze onions in my pantry that I’ve used to season my foods. It was only just recently that I actually purchased a REAL onion [#babysteps #eventheroomiewasimpressed]. I’ve used it a few times now and in this particular recipe I really like it. I’m trying to learn to love it but how can you love something that makes you cry!
