peppermint s’more cups

peppermint smore cups s’mores are not just for camping
I’ve always associated s’mores with going camping but after going to a couple of events with s’mores inspired treats I may reconsider. I should really stay away from those three naughty ingredients but I decided to indulge instead because it is Christmas after all. I made these for the family get-together on Christmas eve and I got thumbs up all around. With just a few minor tweaks it can be an anytime treat, even if you’re not going camping {interestiiiing}. However, the peppermint marshmallow and crushed candy canes are a must for a truly festive treat.

ingredients
7 whole graham crackers
¼ cup powdered sugar
5 tbsp butter, melted
24 dark chocolate Hershey’s Kisses
peppermint marshmallow
2 candy canes, crushed

instructions
1. Pre-heat oven to 350.
2. Place graham crackers in food processor and pulse until they are fine crumbs.
3. Add butter and powdered sugar and pulse until it gets incorporated.
4. Place crumb mixture into each cup of a mini-muffin pan. Press crumb to form shallow cups.
5. Bake for 4-5 minutes.
6. Remove pan from oven and place 4-5 mini marshmallow into each cup.
7. Place the muffin pan back into the oven for 2 minutes. While that’s in the oven, unwrap the Hershey Kisses, place in a microwave safe bowl and put it in the microwave for 2 minutes.
8. Remove the muffin pan from oven and let cool for a few minutes. Using a spoon add chocolate and crushed candy cane to each cup.

Need to relieve some stress? how about pounding on some candy canes… just be careful, those little pieces will go flying everywhere!

I don’t have double boiler but melting chocolates using the microwave was just as good. In just two minutes they melted down into a creamy consistency.

Assembling everything together was the best part. The graham cups on some of them did crumble before I got a chance to transport them out of the mini muffin pan… perhaps I needed to refrigerate them, or maybe I should’ve added more butter? Let me know how it goes if you try it.
