Usually what I eat for breakfast doesn’t vary much but I do try to think of different ways to make the same things. I especially love oatmeal because it’s a nice base to incorporate just about any kind of flavors you may be in the mood for. I wouldn’t usually buy pineapple but my roommate had some in the fridge so I took just one little ring (she definitely noticed). But that’s all you need to make this delicious cocktail-inspired oatmeal bake.


 ½ cup old-fashioned oats
1 cup unsweetened almond milk
¼ cup egg white
½ scoop of vanilla protein powder
½ tsp baking powder
30 drops liquid vanilla crème stevia
2 tbsp unsweetened coconut flakes
⅓ tsp coconut flavoring
1 ring sliced fresh pineapple
shredded coconut (optional)

1. Using only ½ cup of almond milk and about 20 drops of liquid stevia (the rest will be used as to flood the oatmeal bake), mix together all ingredients.
2. Preheat the oven at 350.
3. In a small oven safe dish first place the pineapple ring in the bottom of the dish and add the mix over it. Bake for 25 minutes.
4. Once done allow it to cool. While it’s cooling take the other ½ cup of almond milk, add about 10 drops of liquid stevia (or you can use vanilla flavoring with any sweetener of choice) and put it in the microwave for 2 minutes.
5. Once the oatmeal bake is cooled and you can handle the dish, flip it into a wide bowl and add the hot milk. Sprinkle some shredded coconut if you like and enjoy!
