What do you do when you have a lot of tomatoes and you don’t want them to go bad? You start looking up any recipe to use them up, duh! The roomie had 3 containers of tomatoes and this was how I helped her get rid of some, I’m such a good friend. I love incorporating sweet flavors to foods and this is was no exception. The pineapples in this salsa was a nice addition.



ingredients

1 cup of chopped tomatoes
 1 (8oz) can of crushed or diced pineapple
¼ cup chopped sweet pepper
¼ cup chopped red onion
1 lime, juiced
1 tbsp olive oil
⅛ cup chopped cilantro

instructions
Practice your knife skills and chop those veggies! Combine all of the ingredients into a bowl and enjoy!

bring me back to summer
This salsa recipe is so refreshing it reminded me of summer. I know we are in the midst of winter but this really took me back. I had these with pita bread that I cut up in triangles and toasted into pita chips. It was light and refreshing and delicious in my tummy.
