egg over oats

This was a result of another one of my crazy ideas. For some reason I wanted eggs over my oats and I knew that if this was going to taste somewhat good I needed to make the oats “savory” instead of sweet. I didn’t do anything fancy with the oats just a little bit of salt and pepper with Mrs. Dash and cooked it in the oven as an oatmeal bake. It’s a good option if you are looking for something different in the morning.



ingredients

½ cup oatmeal
½ cup unsweetened almond milk
¼ cup egg white
1 whole egg
1 scoop of protein (optional)
½ tsp Mrs. Dash Table Blend
salt and pepper, to taste

instructions
Mix all ingredients minus the whole egg and put the mixture in a small oven safe dish. At 350, allow it to cook for about 30 minutes. After the first 5 minutes, crack an egg over it so that it cooks along with the oats. You may need to leave it a little longer if you find the egg is still not cooked.

I love a runny yolk so as you can see I was working my way around it… best for last, right? About half way through I saw the yummy stream of yolk and it was exactly what I envisioned when I got the idea to put an egg over my oats.
