mini protein chocolate cups with blackberry filling

When I want something naughty I usually prefer to make it myself. This gives me an excuse to try different recipes and it gives me the satisfaction of knowing exactly what went into it. With this recipe I used oat flour, protein powder, unsweetened cocoa powder and sugar-free blackberry jam. Although these little cups look naughty they are far from it; each are about 56 calories with 4g net carbs and 4g of protein each… with a 1:1 carb to protein ratio  you won’t feel guilty eating them!

ingredients
½ cup oat flour
¼ cup almond meal
1 tsp baking powder
30 drops of liquid stevia
2 egg whites (½ cup liquid egg whites)
2 tbsp unsweetened cocoa powder
½ tsp of vanilla extract
¼ cup unsweetened almond milk
1 scoop of chocolate protein
½ tsp blackberry sugar-free jam for each cup

instructions
1. Mix all ingredients minus the jam together to make the batter.
2. Add batter into a mini muffin pan, only fill ¾ of each cup.
3. Take 1/2 tsp of blackberry jam and submerge it into each cup. You may need to poke it with your finger, you want to make sure the batter covers it.
4. Place in 350 preheated oven for 20 minutes. When done, allow it to cool (the jam will be very hot) and enjoy!
