versatility is the name of the game
I’ve started to really love quinoa, it’s just so versatile. I may be behind the curve here but I just recently had breakfast quinoa for the first time and it was so delicious. It’s basically eating it like oatmeal; add milk, protein powder (I always add protein powder to my oatmeal) and any other fixings you want and microwave it for a few minutes. There’s also so many other things you can do with it; have it on the side, add it to your salad, make quinoa patties, or even have it for breakfast… and that’s exactly what I did!
½ cup cooked quinoa
¼ cup egg whites
2 tbsp of dried cranberry
½ medium apple, chopped
¼ tsp ground cinnamon
Mix all ingredients together. Spray a mini muffin pay with and put the quinoa mixture into each cup. You can fill the cup, it won’t rise much. Place it in the oven for 15 minutes at 350. Allow it to cool and consume!

I know what I’m doing I’m a painter
Last week Kenne and I (and her law school buddies) went to a Paint Nite event in Boston where we painted a frozen lake scene. I remember seeing pictures of other people going to these types of events before and I honestly thought it was a paint by number type-of-thing but you truly do start with a blank canvas. The instructor’s guidance make it fool-proof but they also encouraged us to explore our own artistic style. Personally, I think my artistic abilities (if you want to call it that) are best showcased through my cooking, photography, and scrapbooking but I thought my painting came out pretty good… I mean I’m sure the glass of wine helped.
