what’s for breakfast?
I love casseroles because they are pretty straight forward and you can really make a casserole out of just about anything you have. On this day I wanted to switch things up for breakfast. For me, a casserole is kinda like trail mix… the different components are already delicious on their own but mixing them all together makes them even extra delicious :) It’s always good to change things up and this was a good change to my usual breakfast.
ingredients
1 medium sweet potato
5 whole eggs
shredded cheddar cheese
5 slices of turkey bacon
½ tsp chili
instructions
Cut sweet potato into thin slices, add chili to season it. Spread sweet potato onto a greased casserole pan. Place into a preheated oven for 20 minutes (sweet potato will cook slower than eggs). While that’s in the oven you can start making the bacon allowing it to cool so it can get crispy. When the sweet potato is almost done, scramble the eggs and cook only half way on a frying pan and place over the sweet potato, adding the cheese and chopped bacon. Put it back in the oven for another 5 minutes or until egg is fully cooked and enjoy!
