In the spirit of Easter, I was inspired to create what I call “Saint Eggs” which is less sinner version of Deviled Eggs. The holiness behind these Saint Eggs are due to the fact that NO mayonnaise is used in this recipe. In fact, instead of using mayonnaise I substituted it with cauliflower purée. Then the Saint Eggs were topped off with a few drops of the halo goodness white truffle oil.
This recipes was inspired by (created for) all the late night party-goers, the hungry all-nighters students and the workaholics that need a delicious and fulfilling pick me up to help them recover for a long day ahead. Also, this is a concept that Starbucks would be able to capitalize from it if they were to use my idea in creating Belgian waffles based off of their already popular coffee and tea drinks.

Morning or Anytime Snack
I am a breakfast-and-anytime-snack type of guy which led me to dream (yes, I dream about food and recipes from time to time, that’s what real foodies do) about this multi-layer french toast recipe. In my dream there were three things that kept going through my head; breakfast, snack, and lasagna (which I interpreted as something with different layers of flavors). After writing down the recipe I had dreamt about, I challenged myself to come up with a healthier alternative that’s just as flavorful. This led to the “no carb” version of this multi-layer french toast recipe. So with that said I’m sharing my delicious dreams with you and hope that you will enjoy it.
