Since I’ve started to travel for work I haven’t been in my kitchen much. My awesome routine where everything had it’s place and time including work, school, gym and keeping up with tastearoo got discombobulated. I’m still trying to figure out my new routine so please bare with me. On Fridays I’m home and today I felt like baking something. I made this little treat and it didn’t take long at all, I added some protein powder to compensate for the carbs from the oats and the chocolate chips but feel free to leave it out if you’ll like. Also, it was a good excuse to use my cast iron dish :)

happy pi day! chilled mixed berry pie

mixed berry pie it’s pi day!
The nerd in me insisted I make a pie on no other day than pi day! I knew I wanted to make something but didn’t know what to make; ultimately decided on this mixed berry pie that came out delish! It’s chilled so it’s more of a frozen treat. I made it on a small pie dish so you will need to increase the ingredients if you’re making it on a regular sized pie dish. I really like how it came out but the crust actually crumbled and didn’t stick together like I wanted it to :( I made it with nuts and dates, perhaps I needed to add more dates? gluten free thumbprint cookies

The recipe for these little guys has just 6 ingredients and since it uses almond flour it’s gluten-free. Almond flour is my flour of choice for low carb baking. Coconut flour is also another good option but I always have trouble getting the right mixture of ingredients so it’s not too dense or flaky. Another great thing about both of these flours is that it’s also gluten-free! The first time I tried making these I used a homemade pomegranate “jelly” but it pretty much all melted into a big mess so I guess you call this my comeback.

Or is that citrusy goodness? probably the latter. I’m actually not a huge fan of citrus flavors in desserts. I would instead prefer a dessert with chocolate, caramel, nuts, or even berries but for some reason lemon, lime, and orange flavors in desserts just don’t do it for me. Well comparatively speaking anyways, if citrus is my only option then my sweet tooth takes over and inhales it before I can even register it. Just kidding, I don’t inhale my food… well, sometimes. Valentine’s Day is around the corner and I got a hot date planned with the boyfriend, this would be our 4th valentine’s day together :).

When I want something naughty I usually prefer to make it myself. This gives me an excuse to try different recipes and it gives me the satisfaction of knowing exactly what went into it. With this recipe I used oat flour, protein powder, unsweetened cocoa powder and sugar-free blackberry jam. Although these little cups look naughty they are far from it; each are about 56 calories with 4g net carbs and 4g of protein each… with a 1:1 carb to protein ratio  you won’t feel guilty eating them!
