super easy, super healthy hamburger pita pizza

I had this for lunch yesterday and it was seriously delicious that I just had to share. I love pita bread and find any excuse to use it. The inspiration behind making this was I remembered having gone to California Pizza Kitchen a very long time ago and ordering a “hamburger pizza”. Well, this is my version of it, I used ground turkey instead of beef. You’ll notice that I didn’t add any measurements in my ingredients because it’s really up to you and how you want it. The same goes with how long its in the oven just eye-ball it and keep an eye on it… you can’t screw this up, promise.

pineapple tomato salsa

pinapple tomato salsai can’t dance salsa but I love salsa
What do you do when you have a lot of tomatoes and you don’t want them to go bad? You start looking up any recipe to use them up, duh! The roomie had 3 containers of tomatoes and this was how I helped her get rid of some, I’m such a good friend. I love incorporating sweet flavors to foods and this is was no exception. The pineapples in this salsa was a nice addition.

why are there avocados in your waffles?

egg waffle… it’s an egg waffle!
Can’t decide between an omelet or a waffle? try adding your omelet mixture to your waffle iron! One day I randomly thought about what would happen if I added eggs into my waffle maker. At first I thought I will probably just make a huge mess, then I thought, if it does cook it probably won’t rise so it’ll just be half of a waffle and then I thought ‘stop thinking about and just do it!’ {fine. you don’t have to be so mean about it}. So I did and I must say it came out pretty good both esthetically and in my tummy!

I know it looks like it was made with some sort of flour but trust me it’s 100% eggs!

Since thanksgiving is just around the corner {exactly 9 days!} I was craving a thanksgiving-inspired sandwich. I need to cover the basics – turkey, stuffing, and cranberry sauce. Since I was going to make this into a sandwich I decided to forgo the stuffing {who needs the extra carbs anyways!}. I got some turkey thighs and threw that into my crockpot, and then looked up a recipe for a homemade cranberry sauce. There were two recipes that intrigued me, this one is the combination of the two.

After drafting this post I realized I must be on a cranberry kick because this is my third recipe (the first being the pumpkin doughnut and the second one being the quinoa) that incorporates them – I’ll blame it on the time of the year. And, as if I needed another fall ingredient to fiend on, I also got a few pumpkin recipes coming soon.
