i can’t dance salsa but I love salsa
What do you do when you have a lot of tomatoes and you don’t want them to go bad? You start looking up any recipe to use them up, duh! The roomie had 3 containers of tomatoes and this was how I helped her get rid of some, I’m such a good friend. I love incorporating sweet flavors to foods and this is was no exception. The pineapples in this salsa was a nice addition.
i’m a little chili
Chili is one of my favorite foods. It’s been a while since I’ve made this so I decided to add this to the menu for my Mexican date night with Dave. For this one I incorporated sweet potatoes and it was also extra spicy. Dave said this was possibly the best batch I’ve ever made but I personally would’ve preferred less spiciness although it was pretty delicious. I made this one on the crockpot and had it stewing for a good 6 hours… the smell of chili all day long was a bit torturous though.
the superior fries
Remember my obsession with sweet potatoes? Well this is just a continuation of that. I haven’t found a variation of sweet potatoes that I haven’t liked; baked, mashed, fried… as a side item, as part of the main dish, as a dessert… I’ll eat it all. When it comes to fries I would choose sweet potato fries over regular fries any day! They are just freaking delicious and super easy to make; cut them up and place them in the oven!
chop, chop, chop
After learning some very simple chopping techniques from the BCAE cooking class I took last month I’ve really enjoyed doing it. It’s super easy and fun once you figure out the rhythm. This particular recipe is super easy and it’s really just a matter of chopping up some veggies and mixing them up. I was inspired to make this after seeing an instagram post from Fit Fun and Fantastic (I couldn’t find her recipe on the blog but it’s on her instagram), this one has all the basic ingredients she used with a few modification to the seasoning. I had this with turkey that I had cooking in the crockpot… it was perfect!

keen on quinoa
The inspired recipe actually came from the back of a package of Nature’s Earthly Choice tricolor quinoa. I’ve learned not to ignore those recipes, sometimes you find a hidden gem. The first time I made this recipe there were so many things that went wrong that I literally had to throw out the batch. After making it the second time around, with a few tweaks to both the ingredients and the instructions, it came out perfect. This is my modified version and it’s seriously delicious!
